  • 1 lb Ground beef For a traditional taste.
  • 1 medium Onion, chopped Adds flavor.
  • 2 cloves Garlic, minced Enhances taste.
  • 1 can Golden mushroom soup, undiluted Acts as a creamy binder.
  • 2 cups Shredded cheddar cheese For a cheesy flavor.
  • 1 pkg Frozen tater tots Provides a crispy topping.

Instructions
 

Preparation

  • Preheat the oven to 350º Fahrenheit.
  • In a skillet over medium heat, brown the ground beef, onion, and garlic. Cook and stir until the beef is no longer pink. Drain off any fat.
  • Add the undiluted golden mushroom soup and stir to coat.
  • Spray an 8×8 or 9×9 inch baking pan with cooking spray.
  • Add the ground beef mixture to the pan and spread it out evenly.
  • Sprinkle one cup of shredded cheddar over the ground beef.
  • Place tater tots over the top of the cheese, covering the entire top of the casserole.
  • Sprinkle the remaining cheese over the tater tots.

Cooking

  • Bake for 40 minutes or until heated through.
  • Serve immediately. Let stand 5 minutes, then slice.

Notes

For extra crispiness, finish under the broiler for 1 to 2 minutes, watching closely. Casserole can be varied by substituting beef with mushrooms or chicken and using low-sodium options if preferred.
