Ingredients
  

Main Ingredients

  • 400 g boneless skinless chicken thighs (or breasts)
  • 200 g long-grain white rice, rinsed
  • 720 ml low-sodium chicken broth Adjust sodium to taste
  • 1 medium onion, diced
  • 1 large lemon, zest and juice Use fresh for best flavor
  • 2 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • salt and pepper to taste

Instructions
 

Preparation

  • Heat 1 tbsp olive oil in a skillet over medium heat, season chicken with salt and pepper, sear for 2 to 3 minutes per side until golden.
  • Add rinsed uncooked rice, diced onion, lemon zest, juice, oregano, thyme, garlic powder, salt, pepper, and chicken broth to the slow cooker; stir to combine.
  • Place seared or raw chicken thighs on top of the rice mixture.

Cooking

  • Cover and cook on low for 4 to 5 hours or high for 2.5 to 3 hours, avoiding stirring while cooking.
  • In the last 15 to 20 minutes, stir in chopped spinach or frozen peas, cover and let wilt.

Serving

  • Remove chicken, fluff rice with a fork, plate, and garnish with parsley and extra lemon.

Notes

For firmer rice, choose long-grain white rice and measure broth precisely, do not open the lid during cooking.
