  • 400 grams Sweet potatoes, diced Orange-fleshed sweet potatoes add vitamins.
  • 2 tablespoons Olive oil For marinating chicken and drizzling vegetables.
  • 1 cup Broccoli florets Optional, can swap with other vegetables.

Seasonings

  • 1 tablespoon Spicy seasoning mix Adjust according to taste.
  • to taste Salt Helps balance sweet potato flavors.
  • to taste Acid (lemon juice or vinegar) Optional, for flavor enhancement.

Instructions
 

Preparation

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Toss the chicken pieces with the spicy seasoning mix and a drizzle of olive oil. Marinate in the fridge for about 30 minutes.
  • Arrange the diced sweet potatoes and broccoli florets on separate sheet pans. Drizzle with olive oil and sprinkle with salt.
  • Place the marinated chicken on its own sheet pan, skin-side up.

Cooking

  • Bake all ingredients for 12-15 minutes. Remove the broccoli and chicken, stir the sweet potatoes, and roast for an additional 15 minutes.
  • Ensure the chicken reaches an internal temperature of 165 degrees F (74 degrees C).

Assembly

  • Divide the servings into 4 containers and add lemon wedges if desired.

Notes

If using skinless chicken breasts, increase bake time by 3-5 minutes. Cool leftovers to room temperature before refrigerating or freezing.
