  • 1 lb trimmed asparagus
  • 4 oz chopped bacon
  • 1/2 cup grated Parmesan cheese add immediately after roasting
  • 2 tbsp olive oil for tossing asparagus
  • 1 tsp salt for seasoning
  • 1/2 tsp black pepper for seasoning

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a baking dish, toss the trimmed asparagus with 2 tbsp olive oil, 1 tsp salt, and 1/2 tsp black pepper.
  • Scatter 4 oz chopped bacon over the asparagus.

Cooking

  • Roast in the oven for 15-20 minutes, or until the asparagus is tender and the bacon is crispy.
  • Remove the dish from the oven and sprinkle 1/2 cup grated Parmesan cheese over the asparagus and bacon.
  • Return to the oven for an additional 2-3 minutes, until the cheese is melted.

Serving

  • Serve warm as a side dish.

Notes

For variations, replace bacon with smoked almonds for a vegetarian option, and consider adding lemon zest for extra flavor. Store leftovers in an airtight container for up to 3 days.
