Main Ingredients

  • 200 g long-grain white rice (1 cup uncooked) Rinse rice until water runs clear.
  • 360 ml chicken or vegetable broth (1 1/2 cups) Use vegetable broth for a vegetarian option.
  • 1 small onion, chopped (about 100 g) Microwave to soften.
  • 2 cloves garlic, minced Microwave to mellow flavor.
  • 1 tbsp tomato paste (15 g)
  • 1 tbsp neutral oil, optional (15 ml)
  • 1/2 tsp salt, to taste (about 3 g) Adjust according to preference.

Preparation

  • Place the onion and garlic in a microwave-safe dish.
  • Microwave the onion and garlic for 2 minutes until soft.

Cooking

  • Add the onion, garlic, rice, broth, and tomato paste to the rice cooker. Add salt if desired. Stir until combined.
  • Cook in the rice cooker on the standard white rice setting until the broth has been absorbed.
  • Fluff the rice with a fork after the cooking cycle is finished.

Notes

For a spicier version, add 1/2 tsp chili powder or chopped jalapeno before cooking. Store leftovers in an airtight container.
