Ingredients
  

For the Quinoa

  • 1 cup quinoa Rinse before cooking.
  • 2 cups water For cooking quinoa.

For the Beef Mixture

  • 1 lb lean ground beef Browned
  • 1 tbsp olive oil For sautéing vegetables.
  • 1 medium onion Diced.
  • 1 medium bell pepper Diced.
  • 1 medium zucchini Diced.
  • 1 cup black beans Drained and rinsed.
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp cumin
  • to taste salt & pepper

For Serving

  • 2 tbsp salsa Optional, add per bowl.
  • 1 wedge lime For squeezing over bowl.

Instructions
 

Preparation

  • Cook quinoa according to package instructions. Set aside.
  • In a pan, heat olive oil and sauté onion, bell pepper, and zucchini for 5 minutes.
  • Add ground beef and cook until browned, breaking it up.
  • Stir in black beans, garlic powder, paprika, cumin, salt & pepper.
  • Divide quinoa and beef mixture into 4 airtight containers.
  • Serve with salsa or a squeeze of lime for extra flavor.

Notes

Adjust ingredients to fit dietary needs; store properly for freshness. Use airtight containers for meal prep.
