  • 1 cup quinoa or brown rice Prepare as package directs.

For the Chicken

  • 4 pieces chicken breasts Use lean chicken for high protein.
  • 1 tbsp olive oil For searing the chicken.
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp pepper

For the BBQ-Ranch Sauce

  • 1/2 cup Greek yogurt Low-calorie dressing base.
  • 2 tbsp mayo
  • 2 tbsp BBQ sauce
  • 1 tbsp ranch seasoning
  • 1-2 tbsp milk Adjust for desired consistency.

For Toppings

  • 1 cup cherry tomatoes Halved.
  • 1 cup cucumber Diced.
  • 1 cup corn
  • 1 medium avocado Sliced.
  • 1/4 cup cilantro For garnish.

Cooking Grains

  • Prepare quinoa or brown rice as package directs.

Preparing and Searing Chicken

  • Season chicken breasts with garlic powder, onion powder, paprika, salt, and pepper; pound to 3/4-inch if thick.
  • Heat olive oil in a skillet over medium-high heat, cook chicken for 6-7 minutes each side until 165°F.
  • Remove from heat, rest for 5 minutes, then slice against the grain.

Making the BBQ-Ranch Sauce

  • Whisk together Greek yogurt, mayo, BBQ sauce, ranch seasoning, and milk until smooth.

Assembling the Bowls

  • Divide grains among 4 bowls, top with chicken, tomatoes, cucumber, corn, avocado, drizzle with BBQ-ranch sauce, and garnish with cilantro.

Notes

For best BBQ flavor, brush a thin layer of BBQ sauce during the last minute of searing, then rest before slicing. Leftovers store well in airtight containers for up to 4 days.
