Ham and Cheese Brunch Bake

A layered egg casserole made with bread, diced ham, and shredded cheese soaked in a flavorful egg-milk custard, perfect for brunch or meal prep.

Ingredients
  

For the custard

  • 8 large eggs Large eggs for best results.
  • 2 cups milk Use whole milk for creaminess.
  • 1 tablespoon mustard Dijon mustard recommended.
  • 1 teaspoon thyme Fresh or dried thyme.
  • 1 teaspoon garlic powder
  • to taste salt and pepper Season according to preference.

For the bake

  • 8 slices bread Use day-old or lightly toasted bread.
  • 2 cups diced ham Cooked ham, diced.
  • 2 cups shredded cheddar cheese Sharp cheddar is recommended.
  • 1 tablespoon thyme For topping.

Instructions
 

Preparation

  • Arrange a rack in center of oven, preheat to 350 degrees F.
  • In a large bowl, whisk eggs, milk, mustard, thyme, and garlic powder, season with salt and a few grinds of pepper.

Assembling

  • Grease a 13 x 9 inch baking dish with butter.
  • Spread bread in bottom of prepared dish.
  • Top with ham and cheddar.
  • Pour over egg mixture.

Baking

  • Bake uncovered, until eggs are cooked through and ham is golden, 40 to 45 minutes.
  • To make ahead, cover baking dish with foil and refrigerate at least 4 hours and up to overnight, then bake as directed.

Finishing Touch

  • Top with fresh thyme before serving.

Notes

Use day-old bread or lightly toast slices to prevent a soggy bottom. Can be adapted for vegetarian diets by replacing ham with sautéed mushrooms and spinach.
