Ground Beef and Broccoli Stir Fry

Ingredients
  

For the sauce

  • 1 cup soy sauce or tamari for gluten-free option
  • 2 tbsp honey can be substituted with maple syrup for a deeper sweetness
  • 2 cloves garlic minced
  • 1 tbsp ginger minced
  • 1 tbsp cornstarch for thickening

Main ingredients

  • 1 lb ground beef 90% lean recommended for lower fat
  • 1 medium onion diced
  • 4 cups broccoli florets blanched
  • 2 tbsp sesame oil
  • 2 tbsp sesame seeds for garnish
  • 1/4 cup scallions for garnish
  • 150 g cooked rice optional, per serving

Instructions
 

Preparation

  • In a small bowl, whisk together soy sauce, honey, garlic, ginger, and cornstarch. Set aside.
  • Bring a large pot of water to boil. Blanch broccoli for 2-3 minutes until bright green and crisp-tender. Drain and shock in ice water to stop cooking, then drain again.

Cooking

  • Add sesame oil to a large deep skillet over medium-high heat.
  • Add ground beef and onion, cooking until the meat is just cooked through, about 5 minutes.
  • Pour in the reserved sauce, stir to combine, and cook for 1 minute.
  • Add the blanched broccoli and cook for an additional 1 minute.
  • Divide the mixture among 4 plates, layering rice first if using. Top each with sesame seeds and scallions.

Notes

Store leftovers in an airtight container for up to 4 days in the refrigerator, or freeze in portions for up to 3 months.
