For the Casserole

  • 10 cups cubed bread (preferably brioche or challah) Slightly stale bread works best.
  • 8 eggs
  • 2 cups milk Can substitute with almond milk for a dairy-free option.
  • 1 cup packed brown sugar
  • 1 tablespoon vanilla extract
  • 2 teaspoons cinnamon
  • 2 teaspoons nutmeg
  • 1/2 teaspoon salt

For the Topping

  • 1/2 cup melted butter
  • 1/2 cup brown sugar
  • 1 cup chopped pecans Can substitute with walnuts or omit for nut-free.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9×13-inch baking dish.
  • Place the cubed bread into the greased dish.
  • In a large bowl, whisk together eggs, milk, brown sugar, vanilla extract, cinnamon, nutmeg, and salt.
  • Pour the custard evenly over the bread cubes and let stand for 30 minutes at room temperature or refrigerate overnight.
  • Drizzle with melted butter and sprinkle with brown sugar and chopped pecans.

Baking

  • Bake covered for 35 minutes.
  • Uncover and bake for an additional 10-20 minutes until the top is golden and the custard has mostly set.

Serving

  • Let it stand for 10 minutes before serving.
  • Serve warm with maple syrup for drizzling.

Notes

Allowing the bread to soak is crucial for flavor and texture. Use slightly stale bread for best results. Not letting it rest before serving improves the serving quality.
