For the Caramelized Onions

  • 2 Tbsp butter
  • 1 large onion, sliced
  • 5 sprigs fresh thyme
  • to taste salt and pepper for seasoning

For the Sliders

  • 12 pieces slider buns buns like Hawaiian or ciabatta
  • 1 lb thinly sliced roast beef
  • 8 oz provolone or Swiss cheese
  • 2 Tbsp butter, melted for brushing on buns
  • 1 Tbsp parsley, chopped for garnish
  • 1 tsp garlic powder for seasoning

For the Au Jus

  • 1 Tbsp butter for sautéing
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 Tbsp Worcestershire sauce
  • 5 sprigs fresh thyme, chopped
  • to taste salt and pepper for seasoning

Instructions

Preparation

  • Preheat oven to 350°F (175°C).
  • In a large skillet over medium-high heat, melt 2 tablespoons butter. Add onion and thyme sprigs; season with salt and pepper. Cook, stirring occasionally, until caramelized, about 30 to 40 minutes. Discard thyme.

Assembling the Sliders

  • Place bottom halves of slider buns on a large baking sheet. Top with roast beef, cheese, and caramelized onions. Close with top buns.
  • In a small heatproof bowl, microwave the remaining 2 tablespoons butter until melted. Brush on top of buns. Sprinkle with parsley and garlic powder; season with salt.

Baking

  • Bake sliders until warmed through and cheese is melty, about 10 to 15 minutes.

Making the Au Jus

  • In the same skillet over medium heat, melt 1 tablespoon butter. Add garlic and cook, stirring, until fragrant, about 1 minute.
  • Add broth, Worcestershire, and chopped thyme; season with salt and pepper. Bring to a simmer and cook, stirring occasionally, until slightly reduced, about 10 minutes.

Serving

  • Transfer sliders to a platter. Top with parsley and serve with au jus alongside.

Notes

Leftovers reheat well and can be repurposed into a breakfast scramble or a hot sandwich the next day. Refrigerate within 2 hours, use containers that allow stacking without crushing. Reheat at 325°F for 8 to 12 minutes for even warming.
