Ingredients

For the Casserole

  • 8 slices Bacon strips Cooked until golden brown
  • 1 large Onion, chopped Cooked until soft
  • 4 large Bagels, cut into 1-inch chunks Use Everything bagels for best flavor
  • 6 large Eggs Whisked together with other ingredients
  • 1 cup Half-and-half Adds creaminess to the egg mixture
  • 1 teaspoon Kosher salt
  • 1 teaspoon Black pepper
  • 1/4 teaspoon Cayenne pepper Optional for a little heat
  • 1 cup Parmesan cheese, grated
  • 1/4 cup Parsley, chopped For added flavor
  • 8 oz Cream cheese, sliced Layered into the casserole

Instructions

Preparation

  • Heat a large skillet over medium heat. Add the bacon strips and cook for 6–8 minutes until golden brown.
  • Remove the bacon and set it on a paper towel-lined plate. Reserve the grease in the skillet.
  • Add chopped onion to the skillet, cooking for 3–4 minutes until soft.
  • Cut bagels into 1-inch chunks and place them in a large bowl.
  • In a separate bowl, whisk together eggs, half-and-half, kosher salt, black and cayenne pepper, Parmesan cheese, and parsley.
  • Grease a 9-by-13-inch baking dish. Layer half of the bagel pieces, crumbled bacon, and half of the egg mixture. Top with onions.
  • Add slices of cream cheese evenly on top, then repeat the layering process.
  • Cover with foil and refrigerate for 8 hours or overnight.

Baking

  • Preheat the oven to 350°F (175°C). Remove the casserole from the refrigerator and let it sit at room temperature for 30 minutes.
  • Bake for 50 minutes, then remove the foil and bake for an additional 25–30 minutes.
  • Allow to cool for 15 minutes before serving. Top with fresh dill for presentation.

Notes

To ensure your casserole turns out perfectly, remember the following mistakes to avoid: Skipping soaking time, overcrowding the dish, underbaking, ignoring temperature, and forgetting to grease the baking dish.
