  • 200 g dried beans Rinsed and soaked overnight.

  • 4 cups chicken broth Can be substituted with vegetable broth.

Preparation

  • Rinse the beans and soak them in water overnight.
  • In a crockpot, combine the ham bone, soaked beans, onion, carrots, celery, chicken broth, garlic, and bay leaf.

Cooking

  • Cook on low for 8-10 hours or high for 4-6 hours, until the beans are tender.
  • Remove the ham bone, and when cool enough, shred any remaining ham and return it to the soup.
  • Season with salt and pepper.
  • Serve hot, garnished with chopped parsley if desired.

Notes

Avoid common mistakes by soaking beans, seasoning at the end, and not overfilling the crockpot. Cool soup for storage within 2 hours.
