  • 6 toothpicks to secure bacon to hold bacon in place

Preparation

  • Preheat the oven to 400°F (200°C).
  • Drain and thoroughly pat dry the water chestnuts with paper towels. Place them in a mixing bowl.
  • Add 1/2 cup packed light brown sugar to the bowl with the chestnuts. Toss gently until each chestnut is coated with sugar.
  • Cut each bacon slice in half (or thirds if using thick-cut). Wrap one piece of bacon around each chestnut, securing it with a toothpick.
  • Place a wire rack over a foil-lined rimmed baking sheet. Arrange the bacon-wrapped chestnuts on the rack, spaced evenly.

Baking

  • Bake for 20 to 25 minutes, turning each piece halfway through for even crisping.
  • Watch the sugar glaze to ensure it caramelizes to a shiny golden brown without burning.
  • Let the bites cool on the rack for 5 minutes before serving warm or at room temperature.

Notes

Store in an airtight container in the refrigerator for up to 3 days. For best results, reheat in an oven to retain crispiness. Avoid common mistakes such as not drying chestnuts or overcrowding the pan.
