Instructions
 

Preparation

  • Heat 1 tablespoon olive oil in a skillet over medium heat until shimmering.
  • Add minced garlic and chopped sun-dried tomatoes, sautéing until fragrant and softened, about 2-3 minutes.
  • In a bowl, soften the cream cheese, then stir in heavy cream, grated Parmesan, Italian seasoning, and a pinch of salt and pepper until smooth.
  • Pat dry the chicken breasts and season lightly with salt and pepper.

Cooking

  • Place the chicken breasts in the crockpot, pour the sautéed garlic and sun-dried tomatoes over the chicken.
  • Pour in the chicken broth around the edges and spoon the cream cheese mixture over the chicken.
  • Cover and cook on low for 4 to 5 hours until the chicken is tender and cooked through.
  • About 10 minutes before serving, stir in fresh spinach and cover until wilted.
  • Taste the sauce and adjust salt and pepper as needed, then serve over rice, pasta, or mashed potatoes.

Notes

For deeper flavor, consider browning the chicken briefly before adding to the crockpot. Store leftovers in airtight containers for up to 4 days, or freeze portions for up to 3 months. Reheat gently to preserve cream texture.
