  • 2 tablespoons marinara sauce Can be homemade or store-bought, use a pizza sauce for bolder flavor.
  • 1/4 cup shredded mozzarella cheese Part-skim works great.
  • 8 slices turkey pepperoni Swap for thin-sliced salami, cooked sausage crumbles, or roasted vegetables for a vegetarian bowl.
  • 1/4 teaspoon red pepper flakes Optional.
  • 1/2 teaspoon Italian seasoning Optional.
  • to taste Fresh basil leaves Optional, for garnish.

Preparation

  • Add the cottage cheese to a wide, shallow microwave-safe bowl and heat for 60-90 seconds until warm throughout.
  • Spread the marinara sauce evenly over the warmed cottage cheese using the back of a spoon.
  • Sprinkle the shredded mozzarella cheese over the sauce, then arrange the turkey pepperoni slices on top, slightly overlapping them.
  • Return the bowl to the microwave for 30-45 seconds, watching closely until the mozzarella melts completely and starts to bubble.
  • Let the bowl cool for 30 seconds before eating and top with red pepper flakes, Italian seasoning, or fresh basil if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the microwave for 30-45 seconds. Adjust variations to suit dietary preferences.
