Ingredients
  

For the Coffee Rub

  • 2 tbsp coffee grounds
  • 2 tbsp brown sugar
  • 1 tbsp paprika
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper

For the Steaks and Vegetables

  • 1 tbsp olive oil (for steaks)
  • 10-12 oz NY strip steak per typical serving
  • 400 g baby carrots
  • 300 g Brussels sprouts
  • 1 red onion (cut into wedges)
  • 4 smashed garlic cloves
  • 1 tbsp fresh herbs (optional)
  • 1 tbsp olive oil (for veggies)

Instructions
 

Preparation

  • Prepare the Coffee Rub by mixing together all coffee rub ingredients in a small bowl until evenly combined.
  • Season the Steaks by patting them dry, drizzling with olive oil, and coating with the coffee rub. Let rest at room temperature for 15 minutes.
  • Preheat Oven to 425°F (220°C) and prepare veggies by tossing them in a bowl with seasonings and olive oil, then spread on a baking sheet.

Cooking

  • Roast the Veggies in the oven for 25-30 minutes, tossing halfway through.
  • Sear the Steaks in a hot cast iron skillet for 3-4 minutes each side until medium-rare.
  • Rest the Steaks for 5-10 minutes tented with foil to retain juices.
  • Finish and Serve by tossing veggies, seasoning to taste, and serve alongside the steak.

Notes

For variations, you can reduce salt for a low-sodium option or add smoked paprika for a smoky flavor. Ensure to avoid common mistakes like overcrowding the skillet or not allowing the steaks to rest.
