Ingredients
  

For the Chicken

  • 4 pieces chicken breasts About 150 g each
  • 1 tablespoon olive oil For searing

For the Spice Rub

  • 2 teaspoons chipotle powder Adds smoky spice
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt To taste
  • 1 teaspoon black pepper To taste

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a bowl, mix the chipotle powder, smoked paprika, garlic powder, onion powder, salt, and pepper.
  • Rub the spice mixture onto the chicken breasts.

Cooking

  • Heat olive oil in a skillet over medium heat and sear the chicken for 2-3 minutes on each side until golden.
  • Transfer the chicken to a loaf pan and bake in the preheated oven for about 25-30 minutes or until fully cooked.
  • Let the chicken rest for a few minutes before slicing.
  • Serve in bowls with rice or corn and top with fresh toppings like avocado, cilantro, and lime.

Notes

Store cooked chicken in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months. Reheat gently at 325°F (160°C) for 10 minutes.
