  • 4 tsp salt Season both sides
  • 2 tsp pepper Season both sides
  • 1 tbsp olive oil For searing

For the Sauce

  • 1 tbsp butter To sauté garlic
  • 4 cloves garlic Minced
  • 200 g cherry tomatoes Halved
  • 1 tbsp balsamic vinegar
  • 1 tsp sugar To balance sauce

For Topping

  • 240 g mozzarella Sliced for melting
  • 40 g fresh basil Plus additional for garnish
  • 1 tbsp extra virgin olive oil For drizzling at the end

Preparation

  • Season the chicken breasts with salt and pepper on both sides.

Searing

  • Heat olive oil in a skillet over medium-high heat and sear chicken for 3-4 minutes per side until golden brown.

Making the Sauce

  • Lower the heat, add butter, minced garlic, and halved cherry tomatoes, and cook for 3-5 minutes until softened.
  • Add balsamic vinegar and sugar, reducing for 1-2 minutes until the sauce thickens.

Final Steps

  • Return chicken to the pan, top with sliced mozzarella and fresh basil leaves, cover for 2-3 minutes until cheese melts.
  • Garnish the dish with sauce spooned over chicken, fresh basil, and a drizzle of olive oil.

Notes

Caprese Chicken can be adapted for dietary preferences; use skin-on chicken thighs for a low-carb option or replace mozzarella with dairy-free alternatives.
