Ingredients
  

Meat and Vegetables

  • 500 g lean ground beef or turkey Use lean meat to reduce fat content.
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 head cabbage, chopped

Rice and Broth

  • 1 cup uncooked rice
  • 400 g diced tomatoes
  • 4 cups beef broth
  • 2 tbsp tomato paste For added flavor.

Spices

  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp dried thyme
  • 1 tsp dried oregano

Preparation

  • In a large pot, brown the ground meat with the onion and garlic over medium heat. Drain excess fat if needed.
  • Add chopped cabbage and cook for about 5 minutes until it starts to soften.
  • Stir in the uncooked rice, diced tomatoes, beef broth, and tomato paste.
  • Season with paprika, salt, pepper, thyme, and oregano.
  • Bring to a boil, then reduce heat and simmer for 30-40 minutes until the rice is tender and the flavors meld together.
  • Adjust seasoning as needed and serve hot.

Notes

For a richer texture, brown a small amount of tomato paste before adding liquids to caramelize flavors. Finish the soup with 1 tsp apple cider vinegar or 1 tbsp sour cream per bowl to brighten flavors just before serving.
