Transform your weeknight dinner into a spooky delight with these Mini Skull Meatloaves. Perfectly portioned and simple to make, these meatloaves combine comfort food flavors with a fun Halloween presentation.

  • 2 pounds ground beef (80/20 blend)
  • 1 cup panko breadcrumbs
  • 2 large eggs, beaten
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1/4 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • Black olives or raisins for decoration

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin.
  2. In a large mixing bowl, combine ground beef, panko breadcrumbs, beaten eggs, diced onion, minced garlic, ketchup, Worcestershire sauce, thyme, smoked paprika, salt, and pepper. Mix gently.
  3. Divide the mixture into 12 equal portions and pack each portion into muffin cups, shaping them like skulls.
  4. Press halved black olives or raisins into the skulls for eyes and carve nasal and mouth features.
  5. Bake in the preheated oven for 35-45 minutes until cooked through.
  6. Let rest for 10 minutes before serving.

Notes

Substitute ground beef with turkey or plant-based meat for alternatives. For a lighter version, mix in grated vegetables or replace panko with oats.
