A quick and delicious dinner option that combines the brightness of lemon with the richness of butter for a flavorful chicken dish.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • Juice and zest of 1 lemon
  • Fresh parsley, chopped (for garnish)
  • Lemon slices (for garnish)

Instructions

  1. Tenderize the chicken breasts between plastic wrap. Dredge them in a mixture of flour, garlic powder, salt, and pepper until well-coated.
  2. Heat olive oil and 2 tablespoons of butter in a skillet. Sear the chicken for 4-5 minutes on each side, creating a golden-brown crust, then set aside.
  3. In the same skillet, melt the remaining butter. Sauté the minced garlic until fragrant, then add chicken broth, lemon juice, and zest. Allow to simmer for about 3-4 minutes.
  4. Return the chicken to the skillet and simmer for an additional 2-3 minutes in the sauce. Garnish with fresh parsley and lemon slices. Serve over pasta, rice, or steamed vegetables.
