Description
This moist and fluffy flourless banana bread is made with just oats, bananas, eggs, and nut butter. It’s gluten-free, refined sugar-free, and the perfect healthy treat for any time of day.
Ingredients
3 ripe bananas
2 large eggs
1/2 cup peanut or almond butter
1 1/2 cups rolled oats
1 tsp baking soda
1/2 tsp cinnamon
1 tsp vanilla extract
Pinch of salt
Instructions
1. Preheat oven to 350°F and grease a loaf pan.
2. Mash bananas in a large bowl.
3. Add eggs, nut butter, and vanilla. Stir well.
4. Add oats, baking soda, cinnamon, and salt. Mix until smooth.
5. Pour batter into loaf pan and smooth top.
6. Bake 35–40 minutes until golden and cooked through.
7. Cool in pan 10 mins, then transfer to rack to cool completely.
8. Slice and serve.
Notes
Use certified gluten-free oats if needed.
Add chocolate chips or nuts for extra flavor.
Freezes well when sliced and individually wrapped.
