A delightful bowl of white chicken chili, packed with flavorful spices and creamy textures, perfect for cozy weeknight dinners.

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 2 cans green chilies, diced
  • 1 tablespoon cumin
  • 1 teaspoon cayenne
  • 1 teaspoon paprika
  • 1 tablespoon oregano
  • Juice of 1 lime
  • Salt and pepper to taste
  • 2 cans white beans, drained and rinsed
  • 1 cup corn
  • 2 cups cooked chicken, shredded or diced
  • 1 cup sour cream
  • Optional toppings: chopped cilantro, shredded cheese, sliced avocados, crispy tortilla chips

Instructions

  1. In a large pot over medium-high heat, add olive oil and sauté finely chopped onion until softened, about 3-5 minutes.
  2. Stir in minced garlic and cook for an additional 30 seconds.
  3. Pour in chicken broth, green chilies, cumin, cayenne, paprika, oregano, lime juice, salt, and pepper. Combine well.
  4. Drain and rinse white beans; puree half with a ladleful of broth and return to the pot along with remaining beans and corn.
  5. Bring the chili to a simmer and let it cook uncovered for 15 to 30 minutes, stirring occasionally.
  6. Remove from heat and stir in cooked chicken and sour cream. Serve hot, garnished with toppings of your choice.
