  • 4 cups vegetable broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 tsp dried thyme

  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion, carrots, and celery; sauté until softened (5-7 minutes).
  3. Introduce minced garlic, thyme, and oregano; cook until fragrant (1 minute).
  4. Add vegetable broth and white beans; bring to a bubbling mixture.
  5. Simmer for 15-20 minutes to meld flavors.
  6. Season with salt and pepper to taste.
  7. Blend slightly for creaminess or leave chunky.
  8. Garnish with fresh parsley and serve hot.

Notes

For a creamier texture, puree a portion of the soup. Adjust seasoning based on your preference.
