A light and tangy vinegar-based coleslaw that’s a perfect side dish for barbecues and family dinners.

Ingredients

  • 4 cups shredded cabbage
  • 1 cup shredded carrots
  • 1/2 cup apple cider vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Dijon mustard
  • 1/4 cup olive oil

Instructions

  1. In a large bowl, combine shredded cabbage and carrots.
  2. In a separate bowl, whisk together apple cider vinegar, sugar, salt, black pepper, Dijon mustard, and olive oil until well combined.
  3. Pour the dressing over the cabbage and carrots, and toss to coat evenly.
  4. Let the slaw sit for at least 30 minutes in the refrigerator before serving to allow the flavors to meld.
