Light and airy deep-fried pastries flavored with vanilla and dusted with powdered sugar.

Ingredients

  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, beat the eggs, then add milk, vanilla extract, and melted butter.
  3. Combine the wet ingredients with the dry ingredients and mix until just combined.
  4. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  5. Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 2-3 minutes on each side.
  6. Remove beignets with a slotted spoon and drain on paper towels.
