A quick and comforting Tomato Basil Gnocchi recipe, featuring soft gnocchi paired with a fresh tomato basil sauce.

  • 500g gnocchi
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 400g diced tomatoes
  • 1 tbsp tomato paste
  • 1 cup vegetable broth
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp Italian seasoning
  • ¼ tsp crushed red pepper
  • ½ cup grated parmesan cheese
  • ¼ cup heavy cream (optional)
  • 1 cup fresh spinach
  • Handful of chopped basil

Instructions

  1. In a nonstick skillet, heat the olive oil over medium heat until it shimmers.
  2. Add the minced garlic and stir for about 30 seconds until fragrant.
  3. Incorporate the diced tomatoes, tomato paste, vegetable broth, salt, and pepper into the skillet.
  4. Sprinkle in the Italian seasoning and crushed red pepper.
  5. Stir in the gnocchi and cook at a gentle boil for 5 minutes, stirring frequently.
  6. Add grated parmesan cheese and heavy cream, mixing until melted.
  7. Finally, stir in the fresh spinach and chopped basil until wilted.
  8. Remove from heat, serve topped with extra basil and parmesan.

Notes

For a dairy-free version, use nutritional yeast instead of parmesan and skip the heavy cream.
