  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1 teaspoon pumpkin pie spice
  • 1 egg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and powdered sugar until smooth.
  3. Mix in the vanilla extract.
  4. Gradually add the flour and salt, stirring until combined.
  5. Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
  6. In another bowl, combine pumpkin puree, brown sugar, pumpkin pie spice, and egg to make the filling.
  7. Make a small indent in the center of each cookie ball and fill it with the pumpkin mixture.
  8. Bake for 15-18 minutes or until edges are lightly golden.
