Texas Caviar is a vibrant, zesty bean and vegetable salad that’s perfect as a dip, side dish, or light main. This heart-healthy dish combines beans, corn, and fresh vegetables with a tangy dressing.

Ingredients

  • 1 tablespoon lime zest
  • 4 tablespoons lime juice (freshly squeezed, approximately 2 limes)
  • ¼ cup olive oil (extra virgin)
  • ½ teaspoon kosher salt (adjust to taste)
  • 1 teaspoon sugar
  • ¼ teaspoon garlic powder
  • 15 ounces black-eyed peas (drained and rinsed)
  • 15 ounces black beans (drained and rinsed)
  • 1 cup corn (fresh or thawed frozen)
  • ¼ cup red onion (diced)
  • ½ cup avocado (cut into ½ inch cubes)
  • ¼ cup mini peppers (diced)
  • ½ cup grape or cherry tomatoes (sliced)
  • 2 scallions (chopped)
  • ¼ cup fresh cilantro (chopped)

Instructions

  1. Whisk lime zest, lime juice, olive oil, kosher salt, sugar, and garlic powder in a bowl until emulsified, about 20 seconds.
  2. Combine black-eyed peas, black beans, corn, red onion, mini peppers, tomatoes, scallions, and cilantro in a large bowl.
  3. Pour the dressing over the bean mixture and toss gently to coat.
  4. Chill at least 1 hour to let flavors marry, up to overnight for deeper flavor.
  5. Just before serving, fold in avocado and adjust salt, lime, or sugar to taste.

Notes

Rinse canned beans to reduce sodium. Use fresh lime for brightness, and add avocado just before serving to prevent browning.
