A weeknight recipe combining tangy pineapple with savory soy and brown sugar for a family-friendly meal.

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice (240 ml)
  • 1/2 cup soy sauce (120 ml)
  • 1/2 cup brown sugar (110 g)
  • 1 tablespoon minced garlic (15 g)
  • 1 tablespoon minced ginger (15 g)
  • 1/2 teaspoon black pepper (1.5 g)
  • 1 cup diced pineapple (165 g)
  • 2 green onions for garnish

Instructions

  1. In a bowl, mix pineapple juice, soy sauce, brown sugar, minced garlic, minced ginger, and black pepper.
  2. Place chicken breasts in the crock pot.
  3. Pour the pineapple mixture over the chicken.
  4. Add diced pineapple on top.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  6. Once cooked, shred the chicken with two forks.
  7. Serve over rice and garnish with green onions.

Notes

To ensure a tender texture, don’t overcrowd the crock pot. Use low-sodium soy sauce for a healthier option and feel free to substitute brown sugar with maple syrup.
