A nutritious breakfast wrap that combines spinach, feta, and eggs, offering essential nutrients for stronger nails.

Ingredients

  • 4 large eggs
  • 2 tablespoons butter or olive oil
  • 2 cups fresh spinach
  • 1/2 cup feta cheese, crumbled
  • 4 large tortillas
  • Salt and pepper to taste
  • Cherry tomatoes, diced (optional)

Instructions

  1. In a large bowl, whisk the eggs until the whites and yolks are completely combined.
  2. Place a large skillet over medium heat and add enough butter or olive oil to coat the bottom.
  3. When the butter is melted or oil is hot, pour in the eggs and stir occasionally until cooked.
  4. Stir in a pinch of salt and a generous amount of black pepper, then transfer to a plate to cool.
  5. Rinse the skillet, add more butter or oil, and cook spinach until just wilted. Cool on a plate.
  6. Arrange a tortilla on a work surface and add a quarter of the eggs, spinach, tomatoes, and feta down the middle. Tightly wrap.
  7. Repeat with the remaining tortillas.
  8. Place the wraps in a zip-top bag and freeze until ready to eat.
  9. To reheat, microwave on high for 2 minutes.

Notes

These wraps can be stored in the freezer for up to three months. For a plant-based option, substitute eggs with tofu.
