Soft gingerbread cookies are a delightful holiday treat with a tender texture and rich spices, perfect for festive celebrations.

  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1 large egg
  • 1/2 cup molasses

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In a large bowl, cream the butter and brown sugar until fluffy.
  4. Beat in the egg and molasses until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Roll the dough into balls and place on a baking sheet.
  7. Bake for 8-10 minutes until the edges are set but the centers are soft.
  8. Let cool on the sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For dairy-free, replace butter with coconut oil. For gluten-free, use a gluten-free flour blend.
