Slow Cooker Garlic Butter Beef Bites and Potatoes

A comforting one-pot slow cooker meal featuring tender beef bites, creamy baby potatoes, and green beans in garlic butter.

Ingredients

  • 900 g beef, cut into 2.5 cm bites
  • 600 g baby potatoes, whole or halved if large
  • 2 tbsp onion soup mix (approx. 20 g)
  • 1 tsp salt (5 g)
  • 1/2 tsp black pepper (1 g)
  • 1 tsp garlic powder (3 g), plus 3 cloves minced garlic
  • 75 g butter, divided
  • 120 ml water
  • 200 g green beans added last hour

Instructions

  1. Spray the bottom of the slow cooker with non-stick cooking spray.
  2. Add beef and potatoes to the slow cooker.
  3. Season with onion soup mix, salt, pepper, garlic powder, and minced garlic.
  4. Add butter and water.
  5. Cook for 3-4 hours on high or 6-8 hours on low, stirring occasionally.
  6. In the last hour or two, add green beans and more butter if desired.
  7. Note substitutions: use frozen or canned beans if preferred; cut large potatoes in half for even cooking.

Notes

For extra flavor, brown the beef quickly in a skillet for 2-3 minutes per side before adding to the slow cooker.
