Sheet Pan Ground Beef Nachos are a delicious and easy-to-make snack, perfect for gatherings, combining protein, fresh veggies, and melted cheese on a single baking sheet.

Ingredients

  • 1 lb ground beef
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp cumin
  • Salt and pepper to taste
  • 1 cup cherry tomatoes (sliced in half)
  • ¼ yellow onion (chopped)
  • ½ cup frozen corn
  • ½ cup canned black beans (drained and rinsed)
  • ½ cup canned pinto beans (drained and rinsed)
  • ½ cup sliced black olives
  • 4 chopped scallions (about ¾ cup)
  • 2 ½ cups mozzarella cheese (or any cheese you prefer)
  • 5.5 oz tortilla chips

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside.
  2. In a frying pan over medium-high heat, add 1 Tbsp cooking oil and 1 lb ground beef. Stir in the spices: 1 tsp garlic powder, 1 tsp onion powder, 1 tsp paprika, ½ tsp cumin, ½ tsp salt, and ¼ tsp ground black pepper.
  3. Cook until the beef is no longer pink, about 5-10 minutes. Drain any excess grease.
  4. Add a layer of tortilla chips to the baking sheet.
  5. Sprinkle on the toppings: cooked ground beef, chopped scallions, sliced cherry tomatoes, chopped yellow onion, corn, black beans, pinto beans, and black olives.
  6. Finally, sprinkle 2 ½ cups mozzarella cheese on top. Add the baking sheet to the oven. Bake for 12-15 minutes or until the cheese is fully melted.
  7. Remove from oven and let cool for 5 minutes, then serve.

Notes

Customize with different proteins or cheeses as desired. Store leftovers in an airtight container for up to 3 days.
