Sausage, Egg, and Cheese Breakfast Roll-Ups

Portable and delicious sausage, egg, and cheese roll-ups, perfect for busy mornings and meal prep.

Ingredients

  • 1 pound ground breakfast sausage, mild or spicy
  • 8 large eggs, whisked
  • 1 cup shredded cheddar or American cheese, packed
  • 8 medium flour tortillas (8-inch)
  • 1 tablespoon olive oil or 2 teaspoons cooking spray
  • 1/2 teaspoon fine salt, adjust to taste
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the sausage in a skillet over medium heat until browned.
  2. In a separate bowl, whisk the eggs with salt and pepper.
  3. Scramble the eggs in the skillet until fully cooked.
  4. Lay out a tortilla and place some sausage and scrambled eggs in the center.
  5. Add cheese on top.
  6. Roll the tortilla tightly, folding the sides in as you go.
  7. Heat a little olive oil in the skillet and place the roll-ups seam-side down, cooking until golden brown.
  8. Serve warm.

Notes

Use medium heat to avoid over-browning. Let roll-ups rest for 1 minute before slicing to prevent spilling hot fillings.
