A creamy and flavorful butter chicken recipe made with tender chicken thighs, served in a silky tomato sauce, perfect for weeknight dinners.

  • 1 ½ pounds skinless boneless chicken thighs, cut into bite-sized chunks
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon sweet paprika
  • ½ teaspoon curry powder
  • 1 tablespoon Greek yogurt
  • 3 tablespoons vegetable oil
  • 3 tablespoons butter (divided)
  • 6 garlic cloves (minced)
  • 1 medium onion (diced)
  • 1 15-ounce can tomato sauce
  • 1 teaspoon sugar
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 2 cups heavy cream
  • ½ teaspoon cayenne pepper (optional for heat)
  • 1 teaspoon garam masala
  • ½ teaspoon curry powder
  • ¼ cup freshly chopped parsley (optional, for garnish)
  • Naan bread, for serving
  • Steamed rice, for serving

Instructions

  1. Marinate the Chicken: Combine chicken, 1 teaspoon salt, garlic powder, paprika, ½ teaspoon curry powder, and Greek yogurt. Rest 15–30 minutes.
  2. Cook the Chicken: Heat 2 tablespoons oil, sear pieces until golden, 4–5 minutes per side. Remove and set aside.
  3. Prepare the Sauce Base: Melt 1 tablespoon butter, sauté onion and minced garlic until soft, about 5 minutes.
  4. Build the Sauce: Add tomato sauce, sugar, 1 teaspoon salt, black pepper, and remaining curry powder. Simmer 8–10 minutes until slightly reduced.
  5. Season and Simmer: Stir in heavy cream, cayenne if using, and return chicken. Simmer 8–10 minutes.
  6. Finish with Butter: Stir in remaining 2 tablespoons butter and garam masala, finish with chopped parsley.
  7. Serve and Enjoy: Plate with naan or rice immediately, garnish with parsley.

Notes

For deeper flavor, broil marinated chicken for 3–4 minutes before adding to sauce.
