Main Protein Waffles

A high-protein take on classic waffles designed to power your morning with a crispy texture and comforting flavor.

Ingredients

  • 2 large eggs
  • ⅓ cup (80 g) full-fat Greek yogurt
  • 1 to 2 tbsp granulated sweetener (monk fruit or erythritol recommended)
  • 1 tsp vanilla extract (optional)
  • ½ cup (50 g) oat flour (or almond flour)
  • ⅓ cup (30 g) vanilla protein powder
  • ½ tsp baking powder
  • Pinch of fine salt

Instructions

  1. In a large mixing bowl, beat the eggs with Greek yogurt, granulated sweetener and vanilla extract until smooth.
  2. Add oat flour, protein powder, baking powder and salt to the wet mixture. Stir until combined.
  3. Preheat the waffle iron according to the manufacturer’s instructions and lightly grease it with cooking spray.
  4. Pour a couple tablespoons of batter into waffle grids, close the grids, and cook until golden brown and crisp, about 3-5 minutes.
  5. Let cool for 5 to 10 minutes before serving.

Notes

These waffles freeze beautifully and can be reheated for a quick breakfast. Add your favorite toppings for variety.
