A crisp, tangy coleslaw that emphasizes texture balance with bright acidity and a hint of sweetness.

Ingredients

  • 600 g green cabbage, shredded
  • 100 g red cabbage, shredded
  • 150 g carrots, julienned or shredded
  • 120 g mayonnaise
  • 30 ml apple cider vinegar (2 tbsp)
  • 10 g sugar (2 tsp)
  • 10 g Dijon mustard (2 tsp)
  • 2-3 g salt
  • Black pepper, to taste

Instructions

  1. In a large bowl, combine the green cabbage, carrots, and red cabbage.
  2. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, and Dijon mustard until smooth.
  3. Pour the dressing over the shredded vegetables and toss until everything is well coated.
  4. Season with salt and pepper to taste.
  5. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes

For vegan options, substitute mayonnaise with vegan mayo or blended silken tofu. For a lighter version, use Greek yogurt in place of half the mayonnaise.
