These chicken wings crisp up perfectly without frying, featuring bright lemon and mellow garlic flavor for a delicious game day treat.

  • 1.2 kg chicken wings
  • 10 g kosher salt
  • 5 g black pepper
  • 15 ml olive oil
  • 60 ml lemon juice
  • 30 g butter
  • 6 garlic cloves

Instructions

  1. Prep, pat wings dry and toss with kosher salt and black pepper, refrigerate uncovered for 1 hour.
  2. Garlic confit, gently simmer garlic cloves in olive oil for 20-25 minutes until soft.
  3. Arrange wings on a wire rack over a baking sheet and bake for 35 minutes at 220°C (425°F).
  4. Switch oven to broil at 240°C (465°F) for 3-5 minutes for extra crunch.
  5. Whisk butter, lemon juice, and garlic confit oil together.
  6. Combine wings and sauce in a bowl; garnish with parsley and lemon zest.

Notes

Store cooled wings in an airtight container in the fridge for up to 3 days. Reheat in a 200°C (400°F) oven for 8-10 minutes to restore crisp.
