One-Pot White Chicken Chili

A hearty and comforting one-pot meal featuring tender chicken, creamy white beans, and robust spices, perfect for weeknights or gatherings.

  • 1 lb (450 g) chicken
  • 3 cloves garlic, minced
  • 1/4 cup chives, chopped
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp basil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 bay leaf
  • 3 cans (15 oz each) great Northern beans
  • 2 cups water
  • 1 can (14.5 oz) chopped tomatoes
  • 1 cup salsa
  • 1 cup sour cream
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken, garlic, chives, oregano, thyme, basil, salt, pepper, and bay leaf. Cook and stir until the chicken is cooked through, about 5 to 8 minutes.
  2. Stir in great Northern beans, water, chopped tomatoes, and salsa. Reduce heat to low and allow to simmer, stirring occasionally for about 1 hour.
  3. Stir in the remaining great Northern beans and sour cream into the chili. Increase heat to medium-low and simmer until the mixture thickens, about 25 minutes. Ladle into bowls and serve warm.

Notes

For added spice, consider incorporating jalapeños. For a vegetarian option, replace chicken with mushrooms or jackfruit. To make it dairy-free, use coconut cream instead of sour cream.
