  • 1 pound boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 2 cups low sodium chicken broth
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried parsley
  • 0.5 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. In a large skillet over medium heat, melt the butter until bubbly.
  2. Season the chicken pieces with salt, pepper, and paprika, then add to the skillet and brown for about 5 minutes.
  3. Stir in the minced garlic and sauté for 30 seconds until fragrant.
  4. Add rice, chicken broth, thyme, and parsley to the skillet, combining well.
  5. Cover the skillet, reduce heat to low, and cook for 20 minutes until rice is tender.
  6. Remove from heat and stir in grated Parmesan cheese until creamy.
  7. Top with fresh parsley before serving.
