A classic dessert featuring fluffy biscuits layered with sweetened strawberries and whipped cream, perfect for summer celebrations.

Ingredients

  • 210 g all-purpose flour
  • 5 g salt
  • 10 g baking powder
  • 20 g sugar
  • 60 g cold butter
  • 120 ml buttermilk
  • 500 g diced strawberries
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 240 ml heavy cream
  • 30 g sugar
  • 1 tsp vanilla extract

Instructions

  1. Mix flour, salt, baking powder, and sugar in a bowl.
  2. Cut in cold butter until the mixture resembles coarse meal.
  3. Stir in buttermilk until just combined.
  4. Turn dough onto a floured surface, shape into a rectangle, and roll to 3/4 inch thickness. Fold in thirds and roll again.
  5. Cut out biscuits and place them on a parchment-lined cookie sheet. Brush with buttermilk and sprinkle sugar over the tops. Chill for 20 minutes.
  6. Preheat oven to 425°F (220°C) and bake for 10-14 minutes until golden brown.
  7. Combine diced strawberries with lemon zest and juice. Let sit for 10 minutes to macerate.
  8. Beat heavy cream with sugar and vanilla extract until fluffy.
  9. Assemble the shortcake by layering biscuits with whipped cream and strawberries. Top with biscuit halves.

Notes

Use cold ingredients for best results and don’t skip the chilling step for the biscuits.
