These Monster Nacho Bites deliver an explosive jalapeño kick, combining the beloved flavors of loaded nachos into a spine-tingling snack perfect for Halloween parties or game days.

  • 48 round tortilla chips (scoop-style)
  • 2 cups sharp cheddar cheese, finely shredded
  • 1 cup Monterey Jack cheese, shredded
  • 4-6 fresh jalapeños, finely diced (remove seeds for less heat)
  • 1 lb ground beef or turkey, cooked and seasoned
  • 1 cup black beans, drained and rinsed (vegetarian option)
  • ½ cup chorizo, cooked and crumbled
  • ½ cup red onion, finely diced
  • 2 Roma tomatoes, seeded and diced
  • ¼ cup fresh cilantro, chopped
  • 1 cup sour cream
  • ½ cup guacamole
  • 2 green onions, sliced thin
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F and line two large baking sheets with parchment paper.
  2. Brown chosen protein in a skillet, seasoning with garlic powder, cumin, and cayenne pepper. Cook for 8-10 minutes.
  3. Combine diced jalapeños with a pinch of salt; let sit for 5 minutes, then mix with diced red onion.
  4. Layer each tortilla chip with a spoonful of cooked protein, jalapeño-onion mixture, and cheeses.
  5. Bake for 8-10 minutes until cheese is melted and edges are golden.
  6. Top with diced tomatoes, cilantro, and green onions. Add sour cream and guacamole just before serving.

Notes

For a milder version, remove seeds from jalapeños. These bites can be assembled up to 4 hours in advance.
