  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • 1 tablespoon dried mint
  • 1 teaspoon sugar
  • 1 tablespoon flour
  • 4 cups chicken or vegetable broth
  • 2 cups water
  • 5 cups frozen spinach
  • 1 cup lentils, rinsed
  • 1 lime, juiced
  • Handful of parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat until shimmering.
  2. Add chopped onion and sauté until golden brown, about 5 minutes.
  3. Stir in minced garlic, cumin, coriander, and paprika. Cook for 2 minutes.
  4. Mix in dried mint, sugar, and flour, cooking for another 2 minutes.
  5. Pour in chicken or vegetable broth and water; bring to a rolling boil.
  6. Add frozen spinach and rinsed lentils. Cook on high for 5 minutes.
  7. Reduce heat to medium-low, cover, and simmer for 20 minutes, stirring occasionally.
  8. Once lentils are tender, stir in lime juice and chopped parsley.
  9. Remove from heat; let sit for 5 minutes before serving.

Notes

Serve warm. This recipe is perfect for meal prep and can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
