Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 cup quinoa, cooked
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup olives, pitted and sliced
  • 1/4 cup tahini paste
  • 1/4 cup water
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Drain and rinse chickpeas under cold water.
  3. Spread chickpeas on a towel-lined baking sheet to dry.
  4. Roast chickpeas in the oven for 45 minutes, drizzling with olive oil and stirring halfway through.
  5. Whisk together tahini paste, water, lemon juice, garlic, salt, and pepper to prepare the dressing.
  6. Assemble bowls with a base of cooked quinoa, topped with roasted chickpeas, cucumber, tomatoes, bell peppers, red onions, and olives.
  7. Garnish with fresh herbs and drizzle with tahini sauce.
