A creamy, savory chicken dish featuring sun-dried tomatoes and parmesan, perfect for impressing loved ones.

Ingredients

  • 4 chicken breasts
  • Salt and pepper, to taste
  • ½ cup all-purpose flour, for dredging
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • ½ teaspoon red pepper flakes
  • 2 tablespoons tomato paste
  • ½ cup white wine
  • 1 cup chicken stock
  • ½ cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • ½ cup heavy cream
  • 1 cup grated parmesan cheese
  • Fresh parsley, for garnish

Instructions

  1. Slice each chicken breast horizontally to create 8 cutlets. Season with salt and pepper.
  2. Lightly dredge each cutlet in flour.
  3. Heat butter and oil in a skillet over medium-high heat. Cook the first four cutlets until golden brown, 4 to 5 minutes per side. Remove and set aside.
  4. In the same pan, melt the remaining butter. Cook chopped onion until translucent, add garlic and red pepper flakes, then stir in tomato paste.
  5. Add white wine, allowing it to reduce by half.
  6. Stir in chicken stock, sun-dried tomatoes, and Italian seasoning. Return chicken to skillet and simmer for 5 minutes.
  7. Stir in heavy cream and parmesan cheese, simmering for an additional 5 minutes.
  8. Serve garnished with fresh parsley and extra parmesan, alongside mashed potatoes or pasta.

Notes

For variations, try adding fresh herbs or substituting turkey cutlets. Store leftovers in an airtight container for up to 3 days.
