A hearty and comforting casserole made with ground beef, rice, and vegetables, perfect for busy weeknights.

  • 1 nonstick cooking spray
  • 1 pound lean ground beef
  • 1 small onion, chopped
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1.33 cups chicken broth
  • 2 cups chopped celery
  • 2 cups water
  • 0.5 cup uncooked white rice
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons soy sauce
  • 1 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Spray a 10×14-inch baking pan or large casserole dish with cooking spray.
  2. Cook and stir the ground beef and onion in a hot skillet until browned and crumbly, about 7 to 10 minutes.
  3. Pour the cream of chicken soup into the skillet. Fill the empty can with chicken broth and pour it into the skillet. Add celery, water, rice, Worcestershire sauce, soy sauce, and salt. Mix well and transfer the mixture to the prepared baking pan.
  4. Bake in the preheated oven until bubbly and rice is cooked through, approximately 1 hour.

Notes

Allow the casserole to sit for 10 minutes before serving for better texture. Store leftovers in an airtight container for up to 3 days.
