  • 2 chicken breast halves
  • 1/2 cup flour
  • 1 teaspoon salt
  • 1 tablespoon lemon pepper seasoning
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 lemon, sliced
  • Fresh basil for serving

Instructions

  1. Prepare Chicken: Place chicken breast halves between plastic wrap and pound lightly into rectangles about 1/4 to 1/8 inch thick.
  2. Coat Chicken: Combine flour and salt in a shallow bowl. Coat chicken breasts with the flour mixture and sprinkle with lemon pepper.
  3. Heat Skillet: Heat a 12-inch skillet over medium-high heat, then add butter and olive oil.
  4. Cook Chicken: Add half the chicken breasts and cook for 3 to 4 minutes until browned and cooked through. Repeat with the remaining chicken.
  5. Add Lemon: Once the chicken is cooked, remove it and cover loosely with foil. Add lemon slices to the skillet and cook for 2 to 3 minutes until they are slightly browned.
  6. Finalize Dish: Return all chicken to the skillet, overlap slightly, and drizzle lemon juice on top. Cook for another 2 to 3 minutes until pan juices are slightly reduced.
  7. Serve: Enjoy with fresh basil and pan juices over hot cooked rice, if desired.

Notes

Use gluten-free flour for a gluten-free option. Add garlic powder or fresh herbs for extra flavor.
