2 links chicken or turkey kielbasa
1 cup cooked quinoa or cauliflower rice
1 bell pepper, sliced
½ onion, sliced
1 tbsp olive oil
2 tbsp Greek yogurt or mustard sauce
Salt, pepper, garlic to taste.
1. Slice the kielbasa and brown in skillet.
2. Add bell pepper and onion; sauté until softened.
3. Stir in pre-cooked quinoa or cauliflower rice.
4. Season with garlic, salt, and pepper.
5. Portion into bowls or containers.
6. Drizzle with Greek yogurt sauce or mustard.
